My friend K asked me to make a Cinco de Mayo cake for her daughter whose birthday is the same day. I scoured pinterest and found a few cake ideas that I liked. This is my translation of some of the cute ideas out there.
The cake is a white cake with the top layer colored red, the middle is white and the bottom is green, for the Mexican flag :) I also made pina colada filling for it. YUM! Hopefully I'll have a photo of the center when the cake is cut.
The 'creature' on the cake is a donkey pinata. Photos don't show that very well. I had fun making my little Mariachi band member, and all those peppers! My daughter Love Bug told me I can't put peppers on a cake. She was not convinced that they were fondant.
